Can you print a $100 NZ note instead of a $20 NZ note simply by changing the printing plates and the colour of the ink? Is it costing someone the cost of printing to produce these notes? After all a New Zealand note is a piece of paper with ink on it. So why wouldn't it cost someone only the cost of printing to create brand spanking new New Zealand notes?

on my limited understanding doesnt there need to be something of worth to hold the value of the money made? and i think too you cant just print money to give people more money as then it becomes worthless - lots of african countries do this print a billion more kwatcha then all of a sudden bread now costs 1000s more cause it has to

I think you are absolutely correct in everything you have said, however I also believe the matter goes deeper. In regards to printing more money just to give it to people, this is also what inflation does to the value of the currency as far as I am aware. It just does it in different way with the same end result. Inflation being short for inflating the supply of money available to the country in my understanding.
